Description

This coffee was grown by Jairo Arcila at a farm in Santa Monica. The Bruce Gesha coffee beans are carefully hand-picked to select only the ripest cherries and then hand-sorted to remove any defects. The coffee is sundried on raised beds in temperature-controlled conditions until the ideal moisture content is achieved.

This microlot is 100% Gesha. This varietal was first discovered in Abyssinia, Ethiopia, in 1931. Gesha was planted in Panama for the first time in 1963 and in Colombia in 2005.

Brew Tips

Looking for a brew recipe? Since not all equipment is the same, we don’t recommend a one-size-fits-all approach. However, here’s a pro tip for espresso: Start by weighing your ground coffee into the espresso basket and use the amount recommended by the basket manufacturer. Then, extract twice as much beverage. So, if it’s a 15g basket, extract 20g of espresso. Experiment by varying the weight of the beverage by +2g each time until you find your favorite. Once you've found that perfect ratio, adjust the grind size to achieve the smoothest texture. Make a note of the brew time, and you should be good to go. We highly recommend using a scale—it takes the guesswork out and helps both you and us troubleshoot and communicate extraction notes.

For filter brewing, we've noticed that less coffee is needed these days. Our beans work best with less coffee, which is a sign of quality beans and expert roasting. Start with 48g/L and slightly increase by 1g/L in your experiments until you find the sweet spot.

Another pro tip: Store your coffee in the fridge and take out just what you need. The coffee should stay fresh and delicious for 4-6 months in the fridge.

Feel free to reach out to our roasters and baristas; we love geeking out and talking brew science!

Every coffee I've had has been great, but the current Columbian gesha - V60 and later espresso. The complexity and clarity were incredible! I perceived notes of raspberry and citrus throughout.

The best thing though has definitely been the roaster's commitment to quality! Proactively suggest an alternative equivalent at the same price because the didn't feel the one I'd ordered was as well developed as the gesha at that point.

Thank you!
